6 Rib pork rack
Maldon sea salt
1 tablespoon chopped fresh rosemary
½ teaspoon fennel seeds
5 gloves of garlic
8 tablespoons caramelised balsamic vinegar
2 tablespoons olive oil
3 large potatoes, roughly chopped
5 sticks of celery, roughly chopped
1 large carrot, roughly chopped
1 large onion, roughly chopped
Preheat oven to 220 º , rub pork with some salt and chopped rosemary and oil into the scored lines, trying to get this into every bit by pushing and rubbing in. Place in a large roasting pan with the vegetables In a pestle and mortar smash up the garlic and remaining chopped rosemary add the caramelised balsamic vinegar, olive oil and drizzle over vegetables Leave for about ½ hour to marinate.
The pork will take about 1.20mins hour to cook. After 20 minutes turn the temperature down to 180, once the pork is cooked, remove it from the oven and rest for 10 minutes. Slice in to cutlets to serve.
